Pizza - Surprise, it's Cauliflower!





Ok...so going along with the whole cauliflower thing, and that it was almost 2014 when I made this, I figured I would try out the cauliflower base for a pizza. Later this week I will try the zucchini one and see which one we like the best.  Now, This isn`t thick crust pizza, or even thin crust. However, it tasted nothing like cauliflower, more like if you had decided to use a flatbread for your crust. Obviously, there is a little more work involved than making your own dough, or even pulling out a store bought crust, but I think, overall, that it is worth the effort as you can still trick yourself into thinking it is pizza if you are trying to start out on the healthier side this year.

I looked at a bunch of different recipes and combined some and then made it my own way. Apparently nearly everyone has trouble picking it up like a regular pizza. However, good news for us on this side of the pond: that`s not what you do with pizza. We use a knife and fork to eat it. Problem solved. (Actually, mine held together relatively well, and I cut it into squares. The edge pieces I could pick up, but not the middle ones).

What you need:
1 head of cauliflower
1/4 cup grana padano (or parm) cheese
1/4 cup mozzarella or pizza cheese
1 egg
1/4 tsp majoram
1/4 tsp sage
1/4 tsp rosemary
1/4 tsp thyme
1/2 tsp basil
1/2 tsp oregano

 For the toppings, you will need to cook them while your dough is cooking as when you put it all together, you will keep it in just long enough for the cheese to melt.

I used mushrooms, red onions and bell peppers as that is what I had, but pile on your favorites! The more liquidy your ingredients though, the less likely your dough will be able to stay together.

Pre-heat your oven to 230 C

First, cut out the core of the cauliflower. This makes the florets pretty much just drop off without a ton of mess.



Now, I pureed mine next, and then put them in the microwave for 3 minutes. I have read the other way around as well. I think if you decide you want your cauliflower super fine, then microwave it first before putting it in the blender.  I have also seen large `rice` size chunks to `sand` size chunks. I started out on the larger side, then decided to blend again to make them smaller, thought I didn`t get down the sand size.



After you have microwaved it and chopped it up (whichever order you do), let it cool and then place in a clean dish towel and squeeze as much liquid out as you can. This will help it stay together a bit better.

Put in a bowl and add the spices, cheeses and egg. The cheese and egg will make it stay together. Feel free to add a bit more cheese if you would like.


Spread on parchment paper, add another piece on top and roll out to the desired shape. My cauliflower made 2 good size oval shapes. I did roll it rather thin though in the hopes that it would stay together well. Didn`t happen as much as I wanted (though it came apart in large chunks at least, not tiny ones). Next time I will try about 5 or 6mm.





Place in a hot oven, on top of parchment paper. Cook for 7 minutes and then carefully flip your dough and cook for another 5. Take out of the oven. Only the edges will be brown.



I did this a few hours before dinner in the hopes that it would dry a bit and stay together better.

Cook your toppings.




Go lightly on the sauce (though I did see someone suggested putting the cheese down first as a buffer), and then add your cooked toppings and the cheese.


Bake for 5 minutes, or until the cheese has melted. My hubby likes the cheese to be brown, so I needed to cook it a bit longer.

Pizza Bites

Snowman shaped pizza bites. 


I was looking for a fun appetizer to bring to a Christmas party, and saw a Christmas tree version of this on Pinterest. I`ve changed the recipe a bit to make it easier (lots of kids around), but here`s the original link.

What you need:
 Pizza dough - I just used store bought this time
Italian blend seasoning - or any pizza seasonings you enjoy
Cream cheese - about 115-150 g depending on how much dough you have
Mozzarella or pizza blend cheese - 1 cup, or about 150 g
(You may want to use the entire 200 g container and the entire bag of cheese for the XL dough)
Pizza sauce - I just used one from a jar this time.
Melted butter for brushing over the top
Finely minced garlic - about 1 tsp
Basil for garnishing the top - I used dried, but fresh would be great.

First roll out your dough and slice it into squares. Mine were a bit on the small side, you want them probably to be at least 1.5 x 1.5 inches.


Mix your cheeses together.



Sprinkle the Italian seasoning (or oregano, etc) on your dough. Place a small ball of the cheese in the middle of the dough.



Add a dollop of pizza sauce - a tiny bit goes a long way!


Fold over the corners until you have something resembling a ball. Place it seem side down on either a baking tray or a shaped pan. Don`t squish them together, put put them next to each other.



Put in the oven at 230 C for 12-15 minutes. Until the top is a golden brown.

Just before the pizza finishes cooking, melt some butter and add your finely minced garlic. Brush it over the top of the pizza balls and then sprinkle with basil.

Pesto and Mushroom Pizza

After trying to get back into meal planning to start the year off right, today was really hectic and pretty much the end of me wanting to shop at the grocery store with the kids..but I managed to grab a few things before we left and they turned into an easy and quick dinner. The packages full of varieties of mushrooms are back on the shelves at Coop, and pizza sounded good, so that is what we did, and it was delicious.

You can dress this up a bit more with some wine and a salad.

What you need:

Pizza dough
Pesto Rosso (or the Pesto Verde, I just prefer the red)
1/3 cup of Parmigiano Reggiano cheese
1 bag of mozzarella cheese
fresh Thyme for seasoning, about 3 sprigs
1 box of button mushrooms
1 package of the wild variety (about 400-700 g combined, depending on the size of your pizza)
1/2 red onion, diced
2 Tbls of olive oil



Put a pan on the stove and turn it on to warm up. Turn the oven on to preheat it (my dough called for 250 C)

Once the pan is hot, add the olive oil. Add the diced onion and cook for about 2 minutes, until tender.


Slice the mushrooms and coarsely chop the variety pack. Add to the pan and let cook until tender, about 4 minutes.


Meanwhile, spread your pesto on the dough and sprinkle some of the Parmigiano cheese on top.


Add the mushroom mixture, being sure to keep the majority of the liquid from your pan off the pizza. A little is ok, but you do not want the dough to get soggy.

Add some fresh thyme, or basil if you prefer, but this variety of pesto already had it included.

Sprinkle with the mozzarella and cook for the time indicated.

Mushroom pizza with rucola and goat cheese

This recipe ended up being a combination of other things I've seen/had.  It started off as a recipe I saw in a WW cookbook - Wild mushrooms with a fire roasted tomato sauce.  It changed when I got to talking to a friend about what to make for a Christmas party - we wanted her to make her bruschetta again -tomato, rucola and goat cheese with garlic (fantastic by the way).

So this is a combination of those mixed in with a few other things I like.  I would make some changes next time (hubby said I could make it again in 2 weeks so it must have been decent anyway :) )

You may notice that I never make my own dough if I can help it - the dough we have available here is a good sized selection - and with 2 little kids I just don't have time.  When I tweak a recipe from another site though, they have usually made their own dough.  Eventually I'll get around to doing it (and have done it before)

What you need:

Pizza teig (I tried the Coop brand this time and it wasn't bad).
Mushrooms - I used the Coop mixture of wild mushrooms plus another container of button mushrooms.  I think I would buy 2 of the wild ones next time and use 1/2 of the button.
Goat cheese - I used the entire 'roll'
Rucola (happily 25% off this time)
1 jar of dried tomatoes in oil
1-2 cloves garlic, diced
1 small red onion, diced
I also had garlic bread on the side

Wash your mushrooms and slice them along with your garlic and onion. Toss the onion and garlic into a pan and cook for 1-2 minutes before adding the mushrooms.  Cook for about 5 minutes.

Roll out your dough.  Pour the oil out of the jar but don't worry about getting it all out - you want some of it.  Roughly chop the tomatoes and then spread the excess oil on the pizza dough and randomly place the tomatoes.

Spread your mushroom mixture on top of this and then slice your goat cheese and place it on top.  (I put the rucola on first this time but would wait until after cooking next time).

Bake for the specified time on the dough (teig) wrapper. Usually about 20 minutes.
After cooking, add some roughly chopped rucola.  Enjoy with a side of garlic bread.
